Beignets done Princess Tiana style!

Disney movies are always so dreamy and so perfect but this movie particularly touched my heart as the Princess Tiana's dream was all about cooking and starting a restaurant #GOALS
Here is Tiana’s Famous Beignets Recipe from The Princess and the Frog with my special twist!

Prep Time: 30 Minutes Cook Time: 1 Hour
Total Time: 1 Hour 30 Minutes Servings: Makes 10 to 14
Ingredients
2 3/4 cups all purpose flour 1 cup buttermilk
1/3 cup water 1/3 cup sugar
1 egg, beaten 2 teaspoons baking powder
1/2 teaspoon vanilla extract 1/2 teaspoon baking soda
1/2 teaspoon salt 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg Vegetable oil, for frying
Confectioners’ sugar, for dusting Chunks of Dark Chocolate
Directions
For the Beignets
- In a bowl, combine the all purpose flour with the sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Whisk everything together 
- In a large round bowl, whisk together the buttermilk, water, egg, and vanilla extract. Now Stir in the flour mixture and knead into a dough 
- Now dust some flour on your work surface. Place the dough on it and keeping patting until it turns into a large 1/2 -inch-thick square. Dust the top with more flour if it gets sticky. Next, slice the dough into 2-21/2 inch squares. Let it rest for 10 mins 
- Heat 2 inches of vegetable oil in a heavy saucepan, wait till the oil starts to bubble. If it gets too hot (judging by the smoke), temporarily turn the heat down, or off. 
- Carefully drop 2 dough squares at a time into the hot oil. Fry them for 2-3 minutes until golden brown, turn them over, and continue frying for 2-3 more minutes. Use a slotted spoon to transfer the beignets to a wire rack set atop paper towels to drain. Dust the beignets with confectioners’ sugar, and enjoy! 
For the Sauce
- Chuck the dark chocolate chunks into a microwavable bowl add a teaspoon of sugar and teaspoon of finely chopped red chillis (Optional) 
- Melt the chocolate for about 40-50 seconds; keep stirring the chocolate until you get a smooth sauce like glaze. 
You can now enjoy this with a hot cup of coffee!
